Sinambong (Patupat) is an Ilocano rice-based delicacy that takes time to prepare. This delicacy is popular in La Union, Isabela, Pangasinan, and Ilocos. Sinambong, also known as Patupat, is a sweet and savory kakanin snack wrapped in buri bags or coconut leaves. This Patupat Recipe is the traditional way to prepare the Ilocan delicacy.
Buri or young coconut leaves are gathered and woven into a small bag. The buri leaves are prepared by weaving them into a basket. With one end open so that you can fill it halfway with malagkit rice (sticky rice). The basket is then tied with a knot, leaving one strip leaf hanging to hang all of the Patupat bunches that have been soaked in boiled sugarcane syrup for an hour. It's tied in bunches on top of the large pot to allow it to dry and drip. You might be wondering why some people call these Sinambong while others say Patupat. This is due to the fact that Sinambong is a Tagalog word, and Patupat is the ilocano translation of Sinambong.
